Things may seem a bit quieter over here, but pretty much the opposite is true when you look behind the scenes. I’m currently very hard at work for my very first own cookbook that will be published this fall. And although I do have experience with creating cookbooks: it’s completely different and so much harder when it’s a book with your name on the cover. I just want each and every recipe to impress, and the same goes for all the pictures, texts and graphic design. It’s a very challenging process, but so incredibly rewarding at the same time and I can’t wait to show you some first peeks.
But first: time for a milkshake! A Mango Colada milkshake, that is. This super simple, but delicious smoothie is based on a recipe from the Dutch Pauline Weuring. Her version combines pineapple and mango, but I prefer to only use mango for a sweeter and colorful shake. It’s a very tropical smoothie that’s also lovely with an added handful of fresh basil or mint leaves. Sunshine in a glass!
1 handful frozen mango
1 handful frozen pineapple (or extra mango)
1/3 cup + 4 tsp (100 ml) coconut milk
1/3 cup + 4 tsp (100 ml) coconut water
handful of ice cubes
1. Mix all ingredients in a blender until you’ve got a smooth, creamy mixture. Too thick? Then add some extra coconut water. Drink immediately.
