Layered berry smoothie with rose water & pistachio

Usually I find smoothies a bit scanty for breakfast, but this layered smoothie is a completely different story. It is kind of a crossover between a traditional smoothie and a yogurt parfait. You pour it into a glass (also because of those pretty layers!), but you eat it with a spoon.

The half frozen berries form a thick, soft-serve like layer that works amazingly well with the creamy yogurt. To add a little Middle-Eastern touch, I added a drop of fragrant rose water and some pistachios for extra color and bite.

I think this makes a perfect breakfast, but this smoothie also works great as a snack or dessert.


Variation
Not a fan of rose water or pistachio? Replace those ingredients with a spoonful of creamy peanut butter, for a delicious Peanut Butter & Jelly smoothie.

INGREDIENTS

for 1 person

2 handfuls of frozen berries
1 handful of berries
drop of rose water
optional: honey, to taste
¾ cup (175 ml) organic yogurt
2 tbsp pistachios, chopped
extra: stick blender

DIRECTIONS

Puree the frozen berries with the other berries, but keep a few behind for garnishing. Add the rose water so you can just taste it (you don’t want it to be overpowering) and add honey, if you like.

Pour the fruit puree in a large glass and add the yogurt on top.

Garnish with the remaining berries and sprinkle with the pistachios.
