BLT with avocado and lemon mayonnaise

This sandwich from my first book ‘All-day breakfast’ is pretty much the perfect hangover meal, but tastes just as good when you’re all sober.

It’s the classic BLT (bacon, lettuce & tomato), but with the addition of creamy avocado and lemon mayonnaise.

And trust me: that makes this hearty sandwich even better.

 

INGREDIENTS
for 1

2 tsp lemon juice
2 tbsp mayonnaise
2 slices of bacon
½ avocado
½ tomato
1 small ciabatta bun
few leafs of lettuce

 

 

DIRECTIONS

Start with the lemon mayonnaise: mix the lemon juice and mayonnaise and add extra lemon juice if you’d like.
Fry the bacon in a non-stick pan until crispy. Meanwhile, slice the avocado and tomato. Cut the ciabatta bun in half and spread both sides with the lemon mayonnaise. Add the lettuce, avocado, tomato and bacon. Eat immediately.
